Easy Grass-Fed Beef Taco Bowls

Ingredients

  • 2 lbs medium ground beef, grass-fed

  • 1 packet Siete Taco Seasoning

  • 1 cup shredded grass-fed cheddar cheese

  • 2 cups corn, fresh or frozen

  • 1 tbsp grass-fed butter

  • garlic powder

  • sea salt, plus more to taste

  • black pepper, plus more to taste

  • 4 medium sweet potatoes

  • 1 tbsp olive oil

  • 1 large avocado

Instructions

1. Preheat your oven to 425°F. Cube the sweet potatoes. Toss with olive oil, salt, pepper, and garlic powder. Then spread evenly on a baking sheet. Roast for 25–35 minutes, tossing halfway through, until golden and tender.
2. Heat a large skillet over medium-high heat. Add the ground beef and cook until browned and cooked through, breaking it apart as it cooks. Add the Siete Taco Seasoning and stir until well combined.
3. Sprinkle the shredded cheddar cheese evenly over the cooked taco meat. Cover the skillet for 2–3 minutes, or until the cheese is melted.
4. Melt the grass-fed butter in a skillet over medium heat. Add the corn, garlic powder, salt, and pepper. Cook for 5–7 minutes, stirring occasionally, until warmed through and lightly golden.
5. Divide the roasted sweet potatoes and taco-seasoned beef between bowls. Add the buttery corn and sliced avocado. Serve warm and enjoy!

The Clean Table Tip: This recipe is perfect for meal prep. Store the beef, sweet potatoes, and corn separately and assemble fresh bowls throughout the week. Add the avocado right before serving.
