Healthy Easter Dessert: Reese’s PB Eggs

Ingredients:

• 1 1/3 cups natural peanut butter (just peanuts)
• 4 tbsp maple syrup
• 1 cup almond flour
• 1–2 cups chocolate (milk, dark, or white)
• 1–2 tsp coconut oil (for melting chocolate)
• Flakey sea salt (optional, for topping)

Directions:

  • In a bowl, mix together the peanut butter, maple syrup, and almond flour until a soft dough forms.

  • Scoop and shape into egg shapes using your hands. Place on a parchment-lined tray.

  • Freeze for 1 hour.

  • Melt chocolate with coconut oil in the microwave (30-second intervals, stirring in between) or over a double boiler.

  • Dip each peanut butter egg into the melted chocolate, coating fully. Place back on the tray.

  • Sprinkle with flakey sea salt while the chocolate is still wet.

  • Let set in the freezer for 15 minutes and enjoy!

Storage: Store in the freezer in an airtight container.
