Healthy Easter Dessert: Reese’s PB Eggs
Ingredients:
• 1 1/3 cups natural peanut butter (just peanuts)
• 4 tbsp maple syrup
• 1 cup almond flour
• 1–2 cups chocolate (milk, dark, or white)
• 1–2 tsp coconut oil (for melting chocolate)
• Flakey sea salt (optional, for topping)
Directions:
In a bowl, mix together the peanut butter, maple syrup, and almond flour until a soft dough forms.
Scoop and shape into egg shapes using your hands. Place on a parchment-lined tray.
Freeze for 1 hour.
Melt chocolate with coconut oil in the microwave (30-second intervals, stirring in between) or over a double boiler.
Dip each peanut butter egg into the melted chocolate, coating fully. Place back on the tray.
Sprinkle with flakey sea salt while the chocolate is still wet.
Let set in the freezer for 15 minutes and enjoy!
Storage: Store in the freezer in an airtight container.
