Avocado + Pesto Chicken Sandwich
Ingredients:
1 large ciabatta bread (recommend getting from a local italian bakery where they make it fresh)
chicken marinated in pesto (cooked)- you can either make your pesto homemade or find a clean store bought version made only from extra virgin olive oil
Freshly sliced mozzarella
1 whole avocado, diced
Extra Virgin Olive Oil
Garlic Powder
Italian Seasoning
Directions:
Preheat oven to 350 F.
Slice the ciabatta load in half lengthwise and place it on a baking sheet lined with parchment paper.
Drizzle the inside of the bread with extra virgin olive oil, then season with garlic powder and Italian seasoning. Do this to both sides of the bread.
On my half- layer the cooked pesto chicken evenly over the bread, the top with freshly sliced mozzarella.
Bake for about 10 minutes in the oven, or until the bread is crispy and the mozzarella is melted.
Remove from the oven and top the other side of the bread with diced avocado - smash the avocado down into the bread
Slice and serve warm!
