Avocado + Pesto Chicken Sandwich

Ingredients:

  • 1 large ciabatta bread (recommend getting from a local italian bakery where they make it fresh)

  • chicken marinated in pesto (cooked)- you can either make your pesto homemade or find a clean store bought version made only from extra virgin olive oil

  • Freshly sliced mozzarella

  • 1 whole avocado, diced

  • Extra Virgin Olive Oil

  • Garlic Powder

  • Italian Seasoning

Directions:

  • Preheat oven to 350 F.

  • Slice the ciabatta load in half lengthwise and place it on a baking sheet lined with parchment paper.

  • Drizzle the inside of the bread with extra virgin olive oil, then season with garlic powder and Italian seasoning. Do this to both sides of the bread.

  • On my half- layer the cooked pesto chicken evenly over the bread, the top with freshly sliced mozzarella.

  • Bake for about 10 minutes in the oven, or until the bread is crispy and the mozzarella is melted.

  • Remove from the oven and top the other side of the bread with diced avocado - smash the avocado down into the bread

  • Slice and serve warm!
