Ground Chicken Taco Bowls
Ingredients
2 lbs ground chicken
1 packet Siete taco seasoning
Organic Cheddar Cheese, shredded
2 large sweet potatoes, peeled and diced
1–2 tbsp olive oil
Salt and pepper
For toppings: salsa, avocado, and full fat sour cream
Directions
Preheat oven to 425°F.
Toss diced sweet potatoes with olive oil, salt, and pepper.
Spread on a baking sheet and roast for 25–30 minutes, flipping halfway through, until tender and slightly crispy on the edges.
While the sweet potatoes are cooking, start cooking the ground chicken. Heat a large skillet over medium heat. Add ground chicken and cook until browned, breaking it apart as it cooks, about 7–9 minutes.
Stir in the taco seasoning and mix well. Add a little water if needed. Simmer for 2–3 minutes until the chicken is fully coated and flavorful.
Assemble the bowls. Divide roasted sweet potatoes into bowls.
Top with seasoned ground chicken and shredded cheddar cheese. Add salsa, avocado, and sour cream.
Serve and enjoy!
