Ground Chicken Taco Bowls

Ingredients

  • 2 lbs ground chicken

  • 1 packet Siete taco seasoning

  • Organic Cheddar Cheese, shredded

  • 2 large sweet potatoes, peeled and diced

  • 1–2 tbsp olive oil

  • Salt and pepper

  • For toppings: salsa, avocado, and full fat sour cream

Directions

  • Preheat oven to 425°F.

  • Toss diced sweet potatoes with olive oil, salt, and pepper.

  • Spread on a baking sheet and roast for 25–30 minutes, flipping halfway through, until tender and slightly crispy on the edges.

  • While the sweet potatoes are cooking, start cooking the ground chicken. Heat a large skillet over medium heat. Add ground chicken and cook until browned, breaking it apart as it cooks, about 7–9 minutes.

  • Stir in the taco seasoning and mix well. Add a little water if needed. Simmer for 2–3 minutes until the chicken is fully coated and flavorful.

  • Assemble the bowls. Divide roasted sweet potatoes into bowls.

  • Top with seasoned ground chicken and shredded cheddar cheese. Add salsa, avocado, and sour cream.

  • Serve and enjoy!
