Eggplant Pizza’s
Eggplant Pizzas:
Ingredients:
- 1 Large Purple Eggplant 
- Pizza Sauce- I like RAO’s 
- Mozzarella 
- Pepperoni (Nitrate Free) 
- Fresh Basil 
- Garlic Powder 
- Red Chili Flakes 
- Salt 
Directions:
- Preheat oven to 400- place parchment paper on a baking sheet 
- Slice the eggplant into thin pieces- lay on a towel and salt each piece. Let sit for a half hour to sweat out the bitters. Rinse the eggplants and dry each piece. 
- Put each piece of eggplant on the parchment baking sheet 
- Spread a thin layer of pizza sauce on each piece 
- Sprinkle garlic powder and red chili flakes 
- Top with mozzarella and pepperoni next 
- Bake for 20-25 minutes, or until cheese is fully melted 
- Top with fresh basil and enjoy!
