White Bean + Kale Soup
White Bean + Kale Soup:
Ingredients
- 3 cans of cannellini beans 
- 1 box of vegetable broth + 1 cup of vegetable broth 
- 2 tbsp. of olive oil 
- 1 medium size yellow onion- diced 
- 2-3 carrots- diced 
- 2-3 stalks of celery-diced 
- 2-3 handfuls of kale 
- 4 garlic cloves- minced 
- 2 tsp. of dried parsley 
- red pepper flakes- add as much as you want depending on how hot you like it, I add 1 tsp. 
- 2 tsp. of dried rosemary 
- 2 tsp. of dried thyme 
Directions:
- Rinse 1 can of cannellini beans. Add to a blender with 1 cup of vegetable broth and pure until smooth liquid. Set aside 
- In a large pot, sauté onion and garlic in olive oil for about 3-4 minutes 
- Add celery and carrots,- sauté for about 5-6 minutes 
- Add 1 box of vegetable broth and the remaining 2 cans of cannellini beans (rinse beans before adding to the soup). Add dried spices at this time- thyme, parsley, rosemary, red pepper flakes 
- Simmer for about 20 minutes and then kale 
- Once kale is added, cook for another 10 minutes 
- Serve and Enjoy! Optional to add fresh parmigiana
