Whipped Hot Honey Ricotta + Chicken Thighs

Ingredients:

  • 1-2 packages of boneless, skinless chicken thighs

  • Olive Oil

  • 1 whole container of ricotta

  • Hot Honey- I like Mike’s Hot Honey

  • Salt and Pepper for taste

  • Spices + Herbs: garlic powder, onion powder, red peper flakes, oregano, parsley

Directions:

  • Preheat the oven to 400 F. Line a baking sheet with parchment paper.

  • Place chicken thighs onto baking sheet. Pat each chicken thigh dry with paper towel.

  • Drizzle olive oil onto each piece and then sprinkle garlic powder, onion powder, red pepper flakes, oregano, and parsley. Season with salt and pepper for taste.

  • Bake in the oven for 30-40 minutes or until fully cooked through.

  • While the chicken is cooking, prepare the ricotta mixture. First, whip the ricotta. You can do this by using a kitchen aid, hand held mixer, or a blender. Once the ricotta is whipped, spread a thin layer on a large serving dish. Drizzle with hot honey, olive oil, and season with salt and pepper.

  • Once the chicken is done cooking, place the chicken thighs on top of the ricotta mixture.

  • Serve and enjoy!
