Lasagna Soup

Ingredients:

  • about 1/2 package of lasagna noodles (broken up into small pieces)

  • 2 tbsp. of olive oil

  • 4 garlic cloves, minced

  • 1 lb. of ground meat

  • 2 tbsp. of tomato paste

  • 1 box of chicken broth

  • 16 oz. of tomato sauce

  • ½ cup ricotta

  • ¼ cup parmigiana cheese

  • ¼ shredded mozzarella

  • ¼ tsp. of each spice/herb: Italian seasoning, garlic powder, onion powder, oregano, parsley, basil, red pepper flakes, salt, black pepper

Directions:

  • In a large dutch oven, over medium heat, add 2 tbsp. of olive oil and minced garlic. Cook until fragrant (about 3-5 minutes).

  • Add ground beef. Cook until there is no pink showing. Add spice/herb mixture. Mix everything together.

  • Add tomato paste, chicken broth, tomato sauce. Mix all together. Bring this to a boil.

  • Add in broken up lasagna noodles. Mix together. Cook until noodles are al dente.

  • Add in cheeses one at time. Mixing together before adding the next cheese: ricotta, parmigiana, and mozzarella.

  • Serve and enjoy!

  • Store in an airtight container in the fridge.
