Lasagna Soup
Ingredients:
about 1/2 package of lasagna noodles (broken up into small pieces)
2 tbsp. of olive oil
4 garlic cloves, minced
1 lb. of ground meat
2 tbsp. of tomato paste
1 box of chicken broth
16 oz. of tomato sauce
½ cup ricotta
¼ cup parmigiana cheese
¼ shredded mozzarella
¼ tsp. of each spice/herb: Italian seasoning, garlic powder, onion powder, oregano, parsley, basil, red pepper flakes, salt, black pepper
Directions:
In a large dutch oven, over medium heat, add 2 tbsp. of olive oil and minced garlic. Cook until fragrant (about 3-5 minutes).
Add ground beef. Cook until there is no pink showing. Add spice/herb mixture. Mix everything together.
Add tomato paste, chicken broth, tomato sauce. Mix all together. Bring this to a boil.
Add in broken up lasagna noodles. Mix together. Cook until noodles are al dente.
Add in cheeses one at time. Mixing together before adding the next cheese: ricotta, parmigiana, and mozzarella.
Serve and enjoy!
Store in an airtight container in the fridge.
