Spicy Italian Pasta Salad

Ingredients:

  • 1 lb. of Fusilli Pasta Noodles- I like the brand Rummo

  • 2 small eggplants or 1 large eggplant

  • 1 container of Boursin Bites

  • 1/2 red onion

  • 9 oz. of spicy italian meats (Always Nitrate Free)- I used the Spicy Uncured Charcuterie Collection from Trader Joe’s

  • 2 large roasted red peppers- I get the jar from Trader Joe’s

  • Dressing: 1/3 cup extra virgin olive oil, 4 tbsp. balsamic vinegar, 2 garlic cloves (minced), 1/4 tsp. red pepper flakes, salt/pepper to taste.

Directions:

  • Preheat oven to 400 F. Line a baking sheet with parchment paper.

  • Slice the eggplant into cube shapes and place on baking sheet. Drizzle with olive oil. Spirinkle salt, pepper, garlic powder, and red pepper flakes. Bake in the oven for 15 minutes or until they are golden brown/crispy.

  • While the eggplant is baking, bring a large pot of water to boil. Cook the pasta noodles according to package.

  • Prep the remaining ingredients: thinly slice the red onion, red peppers, and Italian meats. Set aside.

  • Prep the dressing: in a glass jar or measuring cup, whisk the ingredients together- olive oil, balsamic vinegar, red pepper flakes, salt, and pepper.

  • In a large bowl, add the ingredients- pasta, eggplant, Boursin bites, red onion, spicy italian meats, and red pepper. Pour the dressing over. Mix everything really good.

  • Store in the fridge for 1/2 hour before serving and enjoy!
